Named after the fishing village Celestún, which houses a reserve for flamingos located nearby, the organically cultivated coffee is the product of a cooperation of farmers from Jaltenango in the State of Chiapas in Southern Mexico. Founded in 2011, the coffee is cultivated at altitudes of 1,200 - 1,500 meters, washed by hand and sun-dried. Mexico is one of the first countries to counter beetle infestation with the help of bees. A strong, full-flavoured red and yellow Catuaí coffee produced over 275 hectares in San Andrés, Honduras. Copantillo is mild in acidity with tones of walnuts and chocolate. Positive Changes for Honduras! Honduras is the fifth largest producer of coffee in the world, the third largest in Latin America and the largest in Central America. This is the result of the efforts of 120,000 coffee farming families and coffee institutions. The market continues to grow, but in the last 15 years, Honduran coffee also started to position itself as a producer of high quality coffee. 92% of the growers are small farmers, who have joined forces for the common good; to produce superior quality coffee with modern drying processes for the specialty coffee industry, which in turn has led to a positive change in their earnings and standards of living.
